At the same time, Brazil stands out as one of the countries with the greatest technological evolution regarding the manufacture of second-generation ethanol (E2G), a biofuel that limits the negative consequences on the environment. Following this bias, the present research is carried out due to the need for the use of fuels by the current society and aims to discuss, through a bibliographic survey, about the production of E2G through sugarcane residues, thus emphasizing the importance of bagasse and sugarcane straw during this process, by-products that stand out for being the most used in this process in Brazil. In addition, the steps of manufacturing second- generation ethanol are described: pre-treatment, enzymatic hydrolysis, fermentation and distillation. This cultivation, since colonial times, has undergone tremendous agronomic and industrial development. The cultivation of sugarcane in Brazil kick-started a great business due to the main products obtained from this plant: sugar and ethyl alcohol (ethanol). The sugar alcohol complex is considered the most modern in the world, with Brazil taking a leading position in the production of ethanol. On the other hand, this sector is responsible for environmental impacts, both due to the intense use of natural resources and the large amount of waste generated, the latter being one of the main problems faced by the sugar alcohol industry. For this reason, the present work aims to present which are the by-products of the sugar and alcohol industry and their respective forms of use. Therefore, a bibliographic research was carried out, through articles, monographs, dissertations and theses, on sites such as Google Scholar and SciELO and it was observed that the reuse of by-products of the sugar alcohol industry can be of great interest, both profitable and socio-environmentalItem Balanço hídrico aplicado ao cultivo da cana-de-açúcar na região dos tabuleiros costeiros de Alagoas(Instituto Federal de Educação Ciência e Tecnologia de Alagoas, 2022-03-17) Melo, Ariane Barros; Wanderley, Lucas Suassuna de Albuquerque; Wanderley, Lucas Suassuna Albuquerque; Rocha, Martha Suzana Rodrigues dos Santos; Cunha, Simonise Figueiredo AmaranteObjective: the present study aimed to determine the water requirement and calculate the weather risk for sugar cane in the Tabuleiros Costeiros region of Alagoas. Method: the water requirement of sugar cane was estimated using the Thornthwaite Water Balance (1948) and mapped using a geostatistical procedure. Results: it was found that there is significant variability in the water variability of soils in the region of Tabuleiros Costeiros de Alagoas, providing the existence of water surpluses and deficits throughout the seasons. Usually, the dry season occurs between the months of October to February and the surplus in the months of April to August. The spatialization of the water balance and the climatic risk classes suggests the existence of a pattern, with greater water deficit in the south of the study area, and greater water availability in the center north. Conclusion: the water balance of sugar cane showed that there are production limitations regarding climatic characteristics, which must be supplied with the use of adequate technologies, mainly from the rational use of water.Item Boas práticas de fabricação na indústria de alimentos(2025) Monteiro, Érica Sales; Silva, Marina de Magalhães; Silva, Marina de Magalhães; Leitão, Ana Laura Oliveira de Sá; Cunha, Simonise Figueiredo AmaranteThe growing demand for safe and high-quality food, combined with increasingly stringent regulatory requirements, makes it essential to adopt practices that ensure the integrity of food products. In this context, this paper is dedicated to analyzing and reviewing Good Manufacturing Practices (GMP) in the food industry, a key tool to ensure the quality and safety of products. The aim of this study is to conduct a literature review on Good Manufacturing Practices in the food industry, highlighting their importance in ensuring the quality and safety of food products. The research addresses the main requirements and methodologies associated with the implementation of GMP, such as the international standards ISO 22000 and HACCP, and the need for ongoing employee training. Additionally, it explores the impact of technologies such as traceability and automation in improving production process efficiency. The results of the review indicate that the adoption of GMP contributes to reduced operational costs, increased reliability in processes, and strengthens companies' competitiveness in the global market. Biodiesel, an alternative to fossil diesel, is widely recognized for its environmental, economic and social potential. The use of microalgae in biodiesel production has emerged as a promising solution due to the high productivity of biomass and the ability of these algae to absorb CO₂. The literature review analyzed the production methods, including transesterification, the technological challenges, such as the cost of cultivation and extraction, and the environmental advantages. Compared to other countries, Brazil has some advantages in ethanol production, such as mastery of the entire production process, plenty of land, skilled labor and worker safety. Usually, ethanol production involves the following steps: milling, juice treatment, fermentation and distillation and in some cases dehydration processes. The first generation of ethanol is a traditional system that produces ethanol from sugarcane juice, and which still leads the sugar and ethanol industry and its production by-products such as vinasse, bagasse and filter cake, which are of lower cost for the industry. As for anhydrous ethanol, in addition to the aforementioned stages, there is also the dehydration stage. The same became viable when dealing with the environment, by inhibiting greenhouse gases in their production. The present work aimed to clearly understand the process of electric energy production through the burning of sugarcane bagasse in water tube boilers, showing itself as a highly viable option and of total interest to our country, which at the same time. As the years go by, it is always looking for better alternatives to increase electricity production. Following this perspective, the implementation of a cogeneration system based on sugarcane biomass is extremely important, since it is a consolidated raw material in Brazil, which, in addition to enabling the generation of sugar and ethanol, can use of its residues, specifically the bagasse, for the generation of electric energy. Aiming that for the sugarcane mill there are several advantages such as cost, efficiency, work for the residents, among others, for the environment and health, the subject is already quite different, especially in the pandemic situation that is found in the world where one of the most dangerous symptoms of the virus is shortness of breath. Thus, there is a law that is not yet being put into practice, which seeks to interfere with the demand for burning existing in the cane field using machinery for this harvesting sector, understanding as a solution to the problem of fauna, flora and people. These foods are rich in nutrients and offer health benefits such as reducing the risk of colon cancer and improving bowel function. Thus, this work aims to analyze the relationship between employees and students of the Federal Institute of Alagoas Campus Penedo with functional foods. It is observed that most of the respondents (between 15 and 19 years old), even if they have not yet finished high school, have knowledge about functional foods. 63.3% of respondents report regular consumption of legumes, such as beans, soybeans, peanuts and chickpeas. Despite the knowledge of part of the respondents about the benefits of functional foods, there is still a significant number of young people who are not aware of the subject. Food education and the dissemination of information are important to encourage greater consumption of these foods and promote an increasingly healthier diet.Item Estudo sobre a possível utilização do aço microligado hardox na construção de moendas(2023) Fernandes, Naely Paula Santos; Medeiros, Vanessa Daiany Vieira; Rocha, Martha Suzana Rodrigues dos Santos; Rocha, Martha Suzana Rodrigues dos Santos; Cunha, Simonise Figueiredo Amarante; Santos, Taciana do NascimentoIn Brazil, the sugar-energy industry plays an important role in the economy, as it is responsible for 2% of the Brazilian GDP. Among the products made available by this industry are sugar and ethanol. To obtain these products, it is necessary to extract the juice from sugarcane (the main raw material), which takes place in the milling stage. The materials from which the mill components are made must have some characteristics to make the milling process efficient. Studies on alternative materials are being carried out in order to reduce costs in the maintenance stages. One of the materials analyzed is Steel-Hardox, which has a positive cost-benefit ratio, as it has the characteristic of extending its useful life. This article aims to study and present the benefits attributed to the application of Hardox steel in the construction of mills where the use of Hardox steel demonstrates that it has the potential to cause a reduction in downtime for maintenance, contributing to a positive cost-benefit relationship, since that with fewer stops there is a reduction in production costs.Item Extração de óleos essenciais: uma análise da trajetória no Brasil(2024) Santos, Rismar Freitas dos; Cunha, Simonise Figueiredo Amarante; Cunha, Simonise Figueiredo Amarante; Leitão, Ana Laura Oliveira de Sá; Souza, Felipe Thiago Caldeira deThis article investigates the historical trajectory and technological advancements in the extraction of essential oils, focusing on the Brazilian context. Through a thorough review of specialized literature, traditional and innovative extraction methods are addressed, including steam distillation, organic solvent extraction, cold pressing, and supercritical fluid extraction. Emphasis is placed on the relevance of these methods in preserving the therapeutic and aromatic properties of essential oils, as well as their impact on the cosmetic, food, and health industries. In this regard, we can see the great importance and fundamental role that fertilizers have for agribusiness, and are also extremely important for soils and plants that absorb nutri ents through their roots, such as (NPK) Nitrogen, Phosphorus and Potassium, the ab sence of these nutrients in the soil, causes serious problems for plants and soil, which can become infertile. However, there are not only these nutrients, but there are also macronutrients and micronutrients present in the soil, playing a fundamental role. Con cluding, the great importance of these compounds for soil enrichment and plant devel opment.Item Impacto do estresse materno na gravidez: uma análise química com ênfase nos mecanismos biológicos mediados pelo cortisol(2024) Silva, Cayene dos Santos; Cunha, Simonise Figueiredo Amarante; Cunha, Simonise Figueiredo Amarante; Leitão, Ana Laura Oliveira de Sá; Silva, Marina de MagalhãesThis study aims to analyze the biological mechanisms mediated by cortisol and its implications for fetal development and maternal health, from a chemical perspective. Using a literature review methodological approach, searches were carried out in reliable databases such as Google Scholar, Pubmed and reliable websites.The results indicate that maternal stress activates the hypothalamic-pituitary-adrenal (HPA) axis, increasing the production of cortisol, which can cross the placental barrier and impact fetal neurodevelopment. Chronic exposure to cortisol is associated with structural changes in the fetal brain, risks of premature births and metabolic disorders. Interventions such as Integrative and Complementary Practices (PICs) and strengthening the social support network are highlighted as effective strategies to reduce maternal stress. Thus, ethanol is known to be a sustainable fuel alternative, in which it is generated from renewable sources. However, it is observed that during the production of ethyl alcohol some impacts to the environment are triggered. Therefore, this work aimed to analyze, through a literature review, the environmental impacts caused during each stage of agricultural and industrial production of ethanol. Therefore, impacts such as reduction in soil quality, soil and water bodies pollution by the exacerbated use of pesticides and fertilizers, in addition to atmospheric pollution and loss of biodiversity resulting from the burning, were identified, finally, soil and water pollution were also found due to incorrect disposal or uncontrolled use of residues and effluents from stages of the industrial process of manufacturing ethanol.Item Importância da simulação para a eficiência de produção na indústria sucroalcooleira(Instituto Federal de Educação Ciência e Tecnologia de Alagoas, 2021-12-17) Costa, Daniel Rodrigues de Oliveira da; Rocha, Martha Suzana Rodrigues dos Santos; Rocha, Martha Suzana Rodrigues dos Santos; Cunha, Simonise Figueiredo Amarante; Santos, Taciana do NascimentoSimulation within the industry consists of defining, thinking about formulating, developing a functional specification, which cannot be applied in different situations. This work presents, through a literature review, the importance of simulation for the sugar and ethanol industry and addresses points for this industry, with an increasingly fierce confrontation by the productive sector in the globalized market. The method can be a powerful ally, including many automation and control benefits of all methods of global leveling up and expansion in efficiency parameters. A complete automated system generates a high degree of investment, but provides long-term benefits. It appears that most of the tools produced have already adopted alternative methods of using resources, equipment and planning and process control needs aimed at optimizing processes and products. It is expected that the method will be formalized within the sugar-alcohol industry, so that the procedures and processes are systematized in the manipulation and transformation of, helping to strengthen the production planning manipulation methods, decisions in the information manipulation process work tool option.Item Parâmetros da fermentação alcóolica: estudo de caso na condução do processo fermentativo em uma destilaria de Alagoas(2022) Vieira, Nilzaiane Alves; Souza, Felipe Thiago Caldeira; Souza, Felipe Thiago Caldeira; Santos, Martha Suzana Rodrigues dos; Cunha, Simonise Figueiredo AmaranteAlcoholic fermentation, a biochemical process used to produce ethanol, is carried out mainly by Saccharomyces Cerevisiae (Yeast), where under anaerobic conditions sugars such as glucose and fructose (which come from sugarcane juice or from hydrolysis sucrose) are converted by a process called glycolysis. In this context, the work aims to evaluate the fermentation parameters in a distillery in Alagoas through data obtained from a sugar and alcohol plant located in the Baixo São Francisco region. The data obtained in the 2020/2021 crop year were tabulated and studied, comparing them with the parameters found in articles and books. In general, the analyzed parameters are consistent with literature data promoting an efficient fermentation process for ethanol production. In addition, it was observed that the values of the parameters studied vary throughout the season, requiring efficient monitoring to avoid problems in the fermentation medium.Item Processo da produção do açúcar VHP na usina Caeté/SA - Unidade Marituba(2023) Pereira , Alany da Silva; Cunha, Simonise Figueiredo Amarante; Cunha, Simonise Figueiredo Amarante; Souza, Felipe Thiago Caldeira de; Santos, WellingthonThe manufacture of sugar is characterized by several stages, starting with the arrival of the cane at the mill. In this first stage, the raw material is weighed, sampled, analyzed, unloaded and washed. Next, the company brings efficient techniques for the extraction and preparation of the juice, involving shredding, shredding and magnetic separation. Subsequently, it goes to milling, extracting the sugarcane juice, using the imbibition technique to improve the extraction. Soon after, the extracted sugarcane juice goes to the treatment stage, where the juice is concentrated with evaporation, ending with cooking, crystallization and centrifugation, separating the crystals and honey. The detailing of the process of obtaining refined granulated sugar was understood after experiencing the entire production process of the plant, from the manufacturing sector to the refinery, including the steps of physical-chemical analysis regarding the sugars produced. The analyzes were carried out in the company's industrial laboratory and encompass all stages of sugar refining, controlling the ideal parameters for liqueurs and cooked pasta, intermediate products of the production process, and the final product.Item Processo de produção de kombucha na Pirá fermentados(2025) Ferreira, Ediane Rodigues; Cunha, Simonise Figueiredo Amarante; Cunha, Simonise Figueiredo Amarante; Cabral, Mirelle Márcio Santos; Souza, Felipe Thiago Caldeira deThe report addresses the kombucha production process at the company Kombucha Pirá, highlighting its ancient origin in China until its global popularization and its introduction into the Brazilian industry in 2016. Various activities were carried out, from the meticulous preparation of the tea to the packaging and labeling of the final product. The importance of the second fermentation is highlighted, monitored with a pressure gauge to ensure the safety of the process. The report highlights the company's commitment to excellence in the production of a high-quality beverage and compliance with regulations and standards applicable to food production. The internship in the production sector provided valuable practical experience, allowing me to gain a deeper understanding of the fermentation process and quality control practices. In short, the internship at Kombucha Pirá provided a solid foundation for future work in the food and beverage industry.
