Analytical Chemistry plays a crucial role in the detection and identification of chemical substances and traces, using methods such as mass spectrometry, chromatography, and DNA analysis. This work investigates the relationship between Analytical Chemistry and forensic investigation, highlighting how analytical techniques are applied in solving crimes. The study addresses, through a literature review, the main forensic methodologies, focusing on their contributions to crime scene reconstruction and the collection of precise evidence. The research aims to understand how these tools assist the justice system by improving the reliability of forensic results in criminal investigations. The results demonstrate the relevance of analytical techniques in consolidating scientific evidence. It was found that the accuracy and specificity of the methods contribute to more effective investigations. This article aims to analyze the importance of quality control in this sector, focusing on contamination prevention, compliance with sanitary regulations, and consumer satisfaction. It is a bibliographic, qualitative research based on the review of scientific articles, technical standards, and regulations related to Good Manufacturing Practices (GMP) and the Hazard Analysis and Critical Control Points (HACCP) system. The findings show that the effective implementation of these tools significantly contributes to food safety, brand credibility, and industry competitiveness. The UN highlights its importance in preventing waterborne diseases and protecting public health. In this context, this work aims to analyze the importance of water treatment for public health. To this end, bibliographical research was carried out with analysis of scientific articles and course completion papers, using keywords related to sanitation and public health. The work presents the concept of drinking water and its quality parameters, highlighting physical, chemical and microbiological aspects that directly influence the health of the population, with an emphasis on Brazilian legislation. Furthermore, the impact of the lack of sanitation and water treatment in Brazil is discussed, with alarming data on hospitalizations and inequality of access between regions. The study concludes by emphasizing that investing in basic sanitation is fundamental to guaranteeing health, reducing public spending and promoting social well-being.Item A presença de contaminantes químicos em alimentos e seus efeitos na saúde humana(2025) Pereira , Alana Kelly da Silva; Silva, Marina de Magalhães; Silva, Marina de Magalhães; Leitão, Ana Laura Oliveira de Sá; Góis , Geogia Nayane Silva BeloThe presence of chemical contaminants in food is a growing concern globally, driven by the intensification of agricultural and industrial production. Potentially toxic substances can be unintentionally introduced at various stages of the food production chain, posing risks to public health. This paper aims to analyze the main sources of chemical contamination in food, the effects on human health, and the control and monitoring mechanisms implemented to ensure food safety. Contaminants such as pesticide residues, veterinary drugs, heavy metals, mycotoxins, improper use of food additives, and compounds from processing and packaging will be discussed. The possible health effects include cancer, neurological, reproductive, cardiovascular, and respiratory disorders. The study also emphasizes the importance of adopting Good Agricultural Practices (GAP) and Good Manufacturing Practices (GMP), implementing the Hazard Analysis and Critical Control Points (HACCP) system, and the role of education and training as simple preventive measures to minimize the risks of chemical contamination and ensure the safety of food for public consumption.Item A química dos óleos essenciais(2025) Barreto, Neyse Natália dos Santos; Chaves, Taciana Carneiro; Chaves, Taciana Carneiro; Gois, Georgia Nayane Silva Belo; Silva, Marina de MagalhãesThis article aims to analyze essential oils, volatile compounds rich in terpenes and phenols, highlighting their multiple applications and quality challenges. Considering their relevance in aromatherapy, pharmaceutical and cosmetic industries, agriculture, and food products, the study demonstrates how environmental factors, plant parts used, and extraction methods directly influence their properties. For this, a literature review was carried out using books, undergraduate theses, dissertations, doctoral theses, and articles available on academic platforms such as Science Direct, Scopus, Scielo, and Google Scholar. The analysis highlights the importance of quality control through techniques like GC-MS to ensure purity and safety, particularly in therapeutic applications. Although Brazil faces challenges in standardizing this market, the growing demand for natural products is driving the adoption of stricter regulations. It is concluded that the full use of the sustainable potential of essential oils depends on the integration between scientific research, technological development, and appropriate regulatory frameworks, aiming for safe and effective applications in various sectors.Item A reutilização dos resíduos da cana-de-açúcar para produção do etanol de 2ª geração(2022) Marques, Evyllin Sabrina Ciriaco; Cunha, Simonise Figueiredo Amarante; Cunha , Simonise Figueiredo Amarante; Leitão, Ana Laura Oliveira de Sá; Dória, Bruna Maria Ferrari MachadoCurrently, the world is in a scenario with a significant increase in the demand for ethanol. At the same time, Brazil stands out as one of the countries with the greatest technological evolution regarding the manufacture of second-generation ethanol (E2G), a biofuel that limits the negative consequences on the environment. Following this bias, the present research is carried out due to the need for the use of fuels by the current society and aims to discuss, through a bibliographic survey, about the production of E2G through sugarcane residues, thus emphasizing the importance of bagasse and sugarcane straw during this process, by-products that stand out for being the most used in this process in Brazil. In addition, the steps of manufacturing second- generation ethanol are described: pre-treatment, enzymatic hydrolysis, fermentation and distillation. Finally, with a sustainable purpose, at the end of the bibliographic survey and description of the manufacturing steps, the production of 2G ethanol is carried out.Item Adubação verde no cultivo da cana-de-açúcar(Instituto Federal de Educação Ciência e Tecnologia de Alagoas, 2022-04-11) Jesus, César Marcelino de; Leitão, Ana Laura Oliveira de Sá; Leitão, Ana Laura Oliveira de Sá; Santos, Taciana do Nascimento; Santos, WellinghtonGreen manure has aroused the interest of farmers, as it has been standing out as a strategy for sustainable agriculture, since it allows the recovery and maintenance of soil productivity and reduces the cost of using large amounts of chemical fertilizers. This practice consists of improving the physical, chemical and/or biological characteristics of the soil, it functions by replenishing nutrients, such as nitrogen, which is the main nutritive element and is supplied from legumes, in addition to supplying organic matter to the area being applied. Thus, this study aims to present, in the form of a literature review, the benefits of applying green manure in sugarcane cultivation. For this, the context about the importance of sugarcane for its industry was made, as well the definition of green manure and its effects on soil characteristics, beside highlighting some of the most used species for nutrition and atmospheric nitrogen fixation. Therefore, green manure is a vegetative practice that makes it possible to reduce the amount of chemical fertilizers.Item Agrotóxicos: impactos na agricultura alagoana(Instituto Federal de Educação Ciência e Tecnologia de Alagoas, 2021-10-22) Nascimento, Alailson Araújo do; Oliveira, André Luiz dos; Oliveira, André Luiz dos; Rocha, Martha Suzana Rodrigues dos Santos; Chaves, Taciana CarneiroAgriculture is of significant importance to the economy of Alagoas, but its expansion generates an indiscriminate use of pesticides, causing impacts on agricultural practices and on the population of the state. Therefore, it is necessary to reduce the consumption of pesticides and use agrarian practices with natural foods, in order to generate a better quality of life. I this regard, on the massive use of pesticides in agroecosystems, as well as the consequent impacts of this type of product on the environment and society, this monograph objectifies the need for legislative sanitary actions consistent with the control, assistance to populations and exposed agricultural areas to pesticides. This is a literature review study in the State of Alagoas, with information from the National Health Surveillance Agency (ANVISA) and the Agricultural Defense and Inspection Agency of Alagoas (ADEAL). The largest sector in agriculture in Alagoas, sugarcane, which occupies 453 thousand ha, was observed the use of pesticides such as herbicides, fungicides and insecticides, the chemical group of glycines, bipyridyls, strobilurins and neonicotinoids, causing environmental problems and diseases. Some inconsistencies were identified on the inspection of health policies, however the exemption from the Tax on the Circulation of Goods and Provision of Services (ICMS) allowed greater freedom of use, making them common, directly implying the better development of agricultural activities in the economy of Alagoas, above all there is sustainable production free of pesticides, organic agriculture, which is part of family farming, thus allowing for a natural handling of food as well as improving the quality of human and environmental life.Item Aguardente de cana-de-açúcar (cachaça): processo produtivo aos riscos ocupacionais(Instituto Federal de Educação Ciência e Tecnologia de Alagoas, 2022-04-27) Alves, Arthur Mateus Ferreira; Rocha, Martha Suzana Rodrigues dos Santos; Rocha, Martha Suzana Rodrigues dos Santos; Cavalcante, Maria da Conceição Matos; Silva, Wcleuton OliveiraSugarcane brandy or cachaça is a drink appreciated by many people. However, its production process consists of several risks and accidents at work, so it is of great importance to analyze which risks workers are subject to in their work environment. The methodology adopted for the construction of the work consisted of research by bibliographic review and field research, which aimed to analyze the occupational risks in the production of cachaça, propose solutions to mitigate these risks and associate the regulatory norms. In view of the study, it appears that workers are vulnerable to the most diverse occupational risks in their work environment, associated with the production process of cachaça. Many times, accidents at work occur due to the lack of good working conditions and lack of good training to perform the tasks, so it is of paramount importance that the industry propose ways to mitigate these risks and implement the necessary standards. to have an optimal production, thus providing the well-being of the workers and the best development in their functions.Item Análise e métodos de conservação do leite de coco(2022) Santos, Maria Eduarda dos; Rocha, Martha Suzana Rodrigues dos Santos; Rocha, Martha Suzana Rodrigues dos Santos; Santos, Elisângela Costa; Cabral, Mirelle Márcio SantosFood preservation methods are the most important part of the processes for the food industry, because whit the proper application of these methods, the shelf life of foods extends longer than they normally would without these procedures. In the manufacture of Coconut Milk, the importance of these methods is doubled, as it is a natural food that has a high content of moisture and lipids, factors that are the biggest cause of losses in the production of coconut milk. This is a report of a supervised internship carried out at the company Incoco, referring to the analysis and conservation methods (harvesting in ideal time, careful handling, washing, removal of the Copra properly, laboratory analyses, formulating the milk with the ideal amount of additives, correct packaging, baling and correct storage) as a crucial point in the production of coconut milk. The efficiency of the application of all the methods in the product is visibly noticed by its consumption and by its shelf life, therefore the methods are allowed to be introduced to the product.Item Análise físico-química do mel de abelha produzido pela Associação Amapin no município de Igreja Nova - AL(2024) Santos, Geovana Estefany dos; Silva, Marina de Magalhães; Silva, Marina de Magalhães; Leão, Maurício de Andrade; Chaves, Taciana CarneiroFor hundreds of years, bee honey has been explored by humans and used as a natural food that is extremely beneficial for health and has a high nutritional content. Brazil is one of the countries that produces the most honey, this high production is due to flora and climate variation, essential factors for its production. The municipality of Igreja Nova, belonging to the state of Alagoas, located in the northeast region of the country, presents conditions that contribute to beekeeping practices, but the lack of studies on the subject means that producers have difficulty characterizing this product. In this sense, the present work aimed to analyze the bee honey produced by one of the beekeepers of the Associação de Meliponicultores e Apicultores de Igreja Nova (AMAPIN). To this end, the parameters determined were: pH, humidity, total soluble solids (TSS), titratable acidity and reducing sugars. The samples had a pH varying between 4.3 and 6.7. For SST's, the samples presented values that corroborate the literature. For humidity, honey samples from July to October showed a high concentration of water, while those from November and December were in accordance with the standard. For acidity values, all were within the limits established by legislation and in relation to the concentration of reducing sugars, none of the samples were within the required limits, which may be related to several factors, including the floral origin of the nectar and the premature harvest. Thus, it was possible to conclude that the honey analyzed was of good quality, despite not following all the standards established by legislation, referring to Normative Instruction Nº. 11, dated 10/20/2000 of the Ministry of Agriculture, Livestock and Supply – MAPA.Item Análises laboratoriais do coco ralado(Instituto Federal de Educação Ciência e Tecnologia de Alagoas, 2022-04-20) Martins, João Paulo dos Santos; Rocha, Martha Suzana Rodrigues dos Santos; Rocha, Martha Suzana Rodrigues dos Santos; Santos, Elisangela Costa; Nascimento, Jeilma Rodrigues doSulfites are classified as food additives that act by inhibiting spoilage caused by bacteria, fungi and yeasts in acidic foods and by inhibiting enzymatic and non- enzymatic browning reactions during processing and storage. Moisture determination is an important quality parameter, as the moisture content of a food product affects the storage and marketing of the product. Food acidity analysis is recommended for a large number of foods such as milk, coconut milk, grated coconut, oil, vinegar, fruit products, etc. an indicator of its state of conservation. This report aims to describe the main practical activities developed during the supervised curricular internship. It is verified that the analyzes carried out during the internship period are in accordance with the expected current standards. The results obtained from the analysis of sulphite, moisture and acidity of the moist and sweetened grated coconut were satisfactory, with an average of 233.80 ppm of sulphite; 6.0% to 7.0% moisture; and 3.5% to 4.0% acidity.Item Aplicações usuais do bagaço da cana-de-açúcar(2023) Tributino, Dayane Neves; Nascimento, Jeilma Rodrigues do; Nascimento, Jeilma Rodrigues do; Rocha, Martha Suzana Rodrigues dos Santos; Santos, Taciana do NascimentoThe growth in sugarcane production has generated a large amount of waste in the sugar-energy industries, such as bagasse, which can be completely reused. Therefore, the present study aims to demonstrate where bagasse is currently being applied, taking into account economic and environmental aspects. The methodology used was a literature review on the topic where the theoretical bases of the subject in scientific studies were raised. Thus, it is important to know and study the use of these by-products, so that there is greater productivity and reduction of damage caused to nature. The by-products studied, which are obtained in the process of ethanol production and sugar production are: straw, bagasse, filter cake, molasses, carbon dioxide (CO2), yeasts and vinasse. These by-products can be used within the industry or in other sectors of the economy, also favoring the environment. About 5 to 12 million tons per year of bagasse are produced due to the production of sugar and ethanol. All this may become an environmental pollutant if residues are improperly disposed of. Therefore, it is valid the effort for new alternatives of use for these residues. In this context, second-generation ethanol (2G) has proved to be an attractive alternative, since it has environmental advantages, as it is produced from lignocellulosic residues. This cultivation, since colonial times, has undergone tremendous agronomic and industrial development. The cultivation of sugarcane in Brazil kick-started a great business due to the main products obtained from this plant: sugar and ethyl alcohol (ethanol). The sugar alcohol complex is considered the most modern in the world, with Brazil taking a leading position in the production of ethanol. On the other hand, this sector is responsible for environmental impacts, both due to the intense use of natural resources and the large amount of waste generated, the latter being one of the main problems faced by the sugar alcohol industry. This research brings a comparison between scientific studies that aim to minimize environmental impacts through the use of ashes from the sugarcane production process and its adjacent ones, in order to point out which ones had better results and, consequently, may be more favorable to replace the sand and cement in the civil construction process, generating a chain of positive impacts on the environment and on society as a whole. As a result, the research that had the best performance among those observed, in addition to concluding that sugarcane bagasse ash (CBC) tends to gain even more relevance in the market because it is a new aspect in production. with reusable and lower cost materials and according to the evaluation criterion, it was identified that article number 6 ("Analysis of mortars made with sugarcane bagasse ash to replace the fine aggregate" by Sofia Araújo Lima Bessa) has the best results given the low margin of error and satisfactory results in the analyzed aspects.Item Balanço hídrico aplicado ao cultivo da cana-de-açúcar na região dos tabuleiros costeiros de Alagoas(Instituto Federal de Educação Ciência e Tecnologia de Alagoas, 2022-03-17) Melo, Ariane Barros; Wanderley, Lucas Suassuna de Albuquerque; Wanderley, Lucas Suassuna Albuquerque; Rocha, Martha Suzana Rodrigues dos Santos; Cunha, Simonise Figueiredo AmaranteObjective: the present study aimed to determine the water requirement and calculate the weather risk for sugar cane in the Tabuleiros Costeiros region of Alagoas. Method: the water requirement of sugar cane was estimated using the Thornthwaite Water Balance (1948) and mapped using a geostatistical procedure. Results: it was found that there is significant variability in the water variability of soils in the region of Tabuleiros Costeiros de Alagoas, providing the existence of water surpluses and deficits throughout the seasons. Usually, the dry season occurs between the months of October to February and the surplus in the months of April to August. The spatialization of the water balance and the climatic risk classes suggests the existence of a pattern, with greater water deficit in the south of the study area, and greater water availability in the center north. In this context, this paper is dedicated to analyzing and reviewing Good Manufacturing Practices (GMP) in the food industry, a key tool to ensure the quality and safety of products. The aim of this study is to conduct a literature review on Good Manufacturing Practices in the food industry, highlighting their importance in ensuring the quality and safety of food products. The research addresses the main requirements and methodologies associated with the implementation of GMP, such as the international standards ISO 22000 and HACCP, and the need for ongoing employee training. Additionally, it explores the impact of technologies such as traceability and automation in improving production process efficiency. The results of the review indicate that the adoption of GMP contributes to reduced operational costs, increased reliability in processes, and strengthens companies' competitiveness in the global market. Biodiesel, an alternative to fossil diesel, is widely recognized for its environmental, economic and social potential. The use of microalgae in biodiesel production has emerged as a promising solution due to the high productivity of biomass and the ability of these algae to absorb CO₂. The literature review analyzed the production methods, including transesterification, the technological challenges, such as the cost of cultivation and extraction, and the environmental advantages. In Brazil, despite being a research and development scenario, the favorable conditions and government support position the country as a potential leader in the production of biodiesel from microalgae.
