Potentially toxic substances can be unintentionally introduced at various stages of the food production chain, posing risks to public health. This paper aims to analyze the main sources of chemical contamination in food, the effects on human health, and the control and monitoring mechanisms implemented to ensure food safety. Contaminants such as pesticide residues, veterinary drugs, heavy metals, mycotoxins, improper use of food additives, and compounds from processing and packaging will be discussed. The possible health effects include cancer, neurological, reproductive, cardiovascular, and respiratory disorders. The study also emphasizes the importance of adopting Good Agricultural Practices (GAP) and Good Manufacturing Practices (GMP), implementing the Hazard Analysis and Critical Control Points (HACCP) system, and the role of education and training as simple preventive measures to minimize the risks of chemical contamination and ensure the safety of food for public consumption.Item Análise físico-química do mel de abelha produzido pela Associação Amapin no município de Igreja Nova - AL(2024) Santos, Geovana Estefany dos; Silva, Marina de Magalhães; Silva, Marina de Magalhães; Leão, Maurício de Andrade; Chaves, Taciana CarneiroFor hundreds of years, bee honey has been explored by humans and used as a natural food that is extremely beneficial for health and has a high nutritional content. Brazil is one of the countries that produces the most honey, this high production is due to flora and climate variation, essential factors for its production. The municipality of Igreja Nova, belonging to the state of Alagoas, located in the northeast region of the country, presents conditions that contribute to beekeeping practices, but the lack of studies on the subject means that producers have difficulty characterizing this product. In this sense, the present work aimed to analyze the bee honey produced by one of the beekeepers of the Associação de Meliponicultores e Apicultores de Igreja Nova (AMAPIN). To this end, the parameters determined were: pH, humidity, total soluble solids (TSS), titratable acidity and reducing sugars. The samples had a pH varying between 4.3 and 6.7. For SST's, the samples presented values that corroborate the literature. For humidity, honey samples from July to October showed a high concentration of water, while those from November and December were in accordance with the standard. For acidity values, all were within the limits established by legislation and in relation to the concentration of reducing sugars, none of the samples were within the required limits, which may be related to several factors, including the floral origin of the nectar and the premature harvest. Thus, it was possible to conclude that the honey analyzed was of good quality, despite not following all the standards established by legislation, referring to Normative Instruction Nº. 11, dated 10/20/2000 of the Ministry of Agriculture, Livestock and Supply – MAPA.Item Boas práticas de fabricação na indústria de alimentos(2025) Monteiro, Érica Sales; Silva, Marina de Magalhães; Silva, Marina de Magalhães; Leitão, Ana Laura Oliveira de Sá; Cunha, Simonise Figueiredo AmaranteThe growing demand for safe and high-quality food, combined with increasingly stringent regulatory requirements, makes it essential to adopt practices that ensure the integrity of food products. In this context, this paper is dedicated to analyzing and reviewing Good Manufacturing Practices (GMP) in the food industry, a key tool to ensure the quality and safety of products. The aim of this study is to conduct a literature review on Good Manufacturing Practices in the food industry, highlighting their importance in ensuring the quality and safety of food products. The research addresses the main requirements and methodologies associated with the implementation of GMP, such as the international standards ISO 22000 and HACCP, and the need for ongoing employee training. Additionally, it explores the impact of technologies such as traceability and automation in improving production process efficiency. The results of the review indicate that the adoption of GMP contributes to reduced operational costs, increased reliability in processes, and strengthens companies' competitiveness in the global market. However, challenges such as resistance to change and the need for financial investment are also identified, which require effective strategic management.Item Compostagem: uma estratégia sustentável para a redução de lixo orgânico residencial(Instituto Federal de Educação Ciência e Tecnologia de Alagoas, 2023-03-08) Garcia, Julyana Correia; Silva, Marina de Magalhães; Silva, Marina de Magalhães; Santos, Elisângela Costa; Gomes, Jarbas MaurícioThe improper disposal of organic waste, regardless of its origin, generates waste and contributes negatively to public health and the environment, compromising the quality of life of populations, especially in large urban centers. This scenario requires that measures be taken, seeking an improvement in the quality of life and protecting nature. It is in this sense that the objective of this work arises, to make a homemade compost bin, as an efficient alternative to recycle organic waste. Initially, a diagnostic evaluation was carried out, seeking to collect information from the community in general about what composting would be; if they have already used or if they had the habit of separating organic waste, among others. Soon after, the stage of making the compost was carried out, which is simple to handle, with residential organic matter, easily accessible material and using the microorganisms existing in the compost itself. After collecting the data, the surveys pointed out that the lack of knowledge or an adequate educational awareness system is one of the main reasons for the great waste of the organic fraction in the homes and that only about 40% of the interviewees have the practice of separating the organic waste of others. Regarding the construction of the homemade compost bin, it was possible to prove its great effectiveness in being an adequate and more correct destination for organic waste, because after monitoring some factors such as aeration, pH, temperature and granulometry, this process is capable of promoting an organic fertilizer and natural fertilizer, reducing the odor of residential garbage and reducing the amount of garbage sent to sanitary landfills. Thus, despite being a small compost bin, the results were satisfactory and could serve as a model for the preparation of domestic composting, being considered an action of great environmental and social impact.Item Descarte de medicamentos: um estudo sobre o impacto ambiental e a saúde pública na cidade de Penedo - AL(Instituto Federal de Educação Ciência e Tecnologia de Alagoas, 2023-03-08) Barbosa, Rayane Rocha; Silva, Marina de Magalhães; Silva, Marina de Magalhães; Santos, Elisângela Costa; Cabral, Mirelle Márcio SantosThe advancement of technology has provided the discovery of new drugs, in view of this, the manufacture of medicines has increased, and the consumption of medicines is constantly growing, which most of the time, after being expired or out of use, are discarded inappropriately. These residues, in turn, can be harmful to public health and the environment, which, even with sewage treatment, are not eliminated. The objective of the study was to know the destination given to expired or disused medicines in residences in the city of Penedo - AL. To this end, a diagnostic evaluation was initially carried out, seeking to collect information from the population of Penedense, regarding what would be the disposal of medicines, reverse logistics, if they had home pharmacies, among others. After data collection, the surveys pointed out that the lack of knowledge or an adequate educational awareness system is one of the main reasons for controlling the amount of erroneously discarded medicines and that only 9% of respondents have the practice of discarding drugs adequately, with antibiotics being one of the drugs most discarded, probably due to the withholding of prescriptions for acquisition. Soon after, interviews were conducted in pharmacies, analyzing whether they received such medications and it was proven that there are several collection points (private pharmacies and health centers) so that the community can dispose of them correctly, consciously, and sustainably.Item A química das emoções e sua influência no comportamento humano(Instituto Federal de Educação Ciência e Tecnologia de Alagoas, 2023-03-08) Soares, Kauany Estephane Jordão; Silva, Marina de Magalhães; Silva, Marina de Magalhães; Santos, Elisângela Costa; Lima, Maria Lilian de FreitasNeurotransmitters are brain receptors responsible for communication between cells, allowing transmission from the brain to other parts of the body. These substances are capable of influencing human behavior, affecting mental health, which, despite being a much-discussed topic, is little studied in terms of the production of these receptors. Thus, the objective of the work is to explore this theme, evaluating the way in which the imbalance of these chemical substances affects the individual's behavior and emotions. For that, a bibliographic survey was carried out, followed by data collection, from the application of a virtual form, aiming to evaluate the level of knowledge that the community had about the proposed theme. This questionnaire was applied in the city of Penedo- AL, with 63 volunteer participants. It was found that only 8% of the population of penedense understood neurotransmitters, evidencing the scarcity of research and theoretical deepening of the theme addressed. In addition, 62% of respondents reported behavioral changes whe comparing the pre and post pandemic period. This shows that the imbalance of neurotransmitters resulting from social isolation and a feeling of insecurity reflects negatively on human behavior, generating disorders and mental illnesses. Therefore, it is extremely important to understand the role of these brain receptors as modulators of emotions, so that people can have a healthier and longer life.Item Química dos alimentos(2025) Santos, Edésio Dayvisson José dos; Silva, Marina de Magalhães; Silva, Marina de Magalhães; Leitão , Ana Laura Oliveira de Sá; Góis , Goegia Nayane Silva BeloFood chemistry is a fundamental area within food science, responsible for studying the composition, properties, and chemical transformations that occur during food processing, storage, and preparation. This field is essential to ensure the quality, nutritional value, and safety of products consumed by the population. Understanding macronutrients (carbohydrates, lipids, and proteins) and micronutrients (vitamins, minerals, and water), as well as key chemical reactions in foods such as oxidation, enzymatic browning, hydrolysis, and fermentation; is crucial for controlling processes and preserving desirable food characteristics. In this context, the objective of this study is to conduct a literature review on food chemistry, also addressing the analytical techniques used, such as spectroscopy and chromatography, which are essential for identifying chemical composition, evaluating quality, and detecting possible contamination. As a result, it was observed that mastering these concepts enables continuous improvements in food production and preservation processes, directly contributing to the development of safer, more nutritious products with longer shelf life.
