However, its production process consists of several risks and accidents at work, so it is of great importance to analyze which risks workers are subject to in their work environment. The methodology adopted for the construction of the work consisted of research by bibliographic review and field research, which aimed to analyze the occupational risks in the production of cachaça, propose solutions to mitigate these risks and associate the regulatory norms. In view of the study, it appears that workers are vulnerable to the most diverse occupational risks in their work environment, associated with the production process of cachaça. Many times, accidents at work occur due to the lack of good working conditions and lack of good training to perform the tasks, so it is of paramount importance that the industry propose ways to mitigate these risks and implement the necessary standards. to have an optimal production, thus providing the well-being of the workers and the best development in their functions.Item Análise e métodos de conservação do leite de coco(2022) Santos, Maria Eduarda dos; Rocha, Martha Suzana Rodrigues dos Santos; Rocha, Martha Suzana Rodrigues dos Santos; Santos, Elisângela Costa; Cabral, Mirelle Márcio SantosFood preservation methods are the most important part of the processes for the food industry, because whit the proper application of these methods, the shelf life of foods extends longer than they normally would without these procedures. In the manufacture of Coconut Milk, the importance of these methods is doubled, as it is a natural food that has a high content of moisture and lipids, factors that are the biggest cause of losses in the production of coconut milk. This is a report of a supervised internship carried out at the company Incoco, referring to the analysis and conservation methods (harvesting in ideal time, careful handling, washing, removal of the Copra properly, laboratory analyses, formulating the milk with the ideal amount of additives, correct packaging, baling and correct storage) as a crucial point in the production of coconut milk. The efficiency of the application of all the methods in the product is visibly noticed by its consumption and by its shelf life, therefore the methods are allowed to be introduced to the product.Item Análises laboratoriais do coco ralado(Instituto Federal de Educação Ciência e Tecnologia de Alagoas, 2022-04-20) Martins, João Paulo dos Santos; Rocha, Martha Suzana Rodrigues dos Santos; Rocha, Martha Suzana Rodrigues dos Santos; Santos, Elisangela Costa; Nascimento, Jeilma Rodrigues doSulfites are classified as food additives that act by inhibiting spoilage caused by bacteria, fungi and yeasts in acidic foods and by inhibiting enzymatic and non- enzymatic browning reactions during processing and storage. Moisture determination is an important quality parameter, as the moisture content of a food product affects the storage and marketing of the product. Food acidity analysis is recommended for a large number of foods such as milk, coconut milk, grated coconut, oil, vinegar, fruit products, etc. an indicator of its state of conservation. This report aims to describe the main practical activities developed during the supervised curricular internship. It is verified that the analyzes carried out during the internship period are in accordance with the expected current standards. This article aims to discuss and analyze the challenges related to environmental and economic aspects faced by sugarcane producers in recent times. The study is contextualized by a methodology that includes theoretical and field research. In the first one, we sought to identify theoretical aspects that deal with the panorama of this agriculture, referring to some points that deserve to be highlighted. In the field research, which is a case study, the vision oftwo sugarcane producers regarding the topic under discussion was evidenced. The methodology, already mentioned as theoretical and field, included the recording and analysis of ideas from theorists who deal with this topic and a questionnaire carried out with the two collaborators, through a Google form. The results obtained with this study were satisfactory, as many aspects of the context related to the panorama of sugarcane in Brazil were perceived, as well as the main challenges highlighted by the two producers regarding economic and environmental issues. The acquired knowledge was important to understand the subject in a deeper way.Item Doenças transmitidas por alimentos (Dtas): com enfoques em agentes biológicos(2024) Trindade , Layse Sandrielly dos Santos; Rocha, Martha Suzana Rodrigues dos Santos; Rocha, Martha Suzana Rodrigues dos Santos; Silva, Marina de Magalhães; Cabral, Mirelle Márcio SantosFoodborne Diseases (FBDs) represent a significant public health concern, causing gastrointestinal infections and food poisoning due to the consumption of contaminated food. This study investigates the occurrence, prevention and control of FBDs with a focus on biological agents, currently promoting food safety and raising public awareness of hygiene and food handling practices. In Brazil, there are limitations in the knowledge of the epidemiological profile of FBDs, with few states and municipalities having comprehensive data on the causative agents and the foods most frequently involved. In order to reduce the incidence of FBDs, it is essential to intensify attention to food safety, improve production processes and raise awareness throughout the production chain. The implementation of Good Manufacturing Practice (GMP) programmes, the continuous training of workers and the adoption of advanced hygiene and monitoring technologies are essential measures to guarantee food safety.Item Estudo sobre a possível utilização do aço microligado hardox na construção de moendas(2023) Fernandes, Naely Paula Santos; Medeiros, Vanessa Daiany Vieira; Rocha, Martha Suzana Rodrigues dos Santos; Rocha, Martha Suzana Rodrigues dos Santos; Cunha, Simonise Figueiredo Amarante; Santos, Taciana do NascimentoIn Brazil, the sugar-energy industry plays an important role in the economy, as it is responsible for 2% of the Brazilian GDP. Among the products made available by this industry are sugar and ethanol. To obtain these products, it is necessary to extract the juice from sugarcane (the main raw material), which takes place in the milling stage. The materials from which the mill components are made must have some characteristics to make the milling process efficient. Studies on alternative materials are being carried out in order to reduce costs in the maintenance stages. One of the materials analyzed is Steel-Hardox, which has a positive cost-benefit ratio, as it has the characteristic of extending its useful life. This article aims to study and present the benefits attributed to the application of Hardox steel in the construction of mills where the use of Hardox steel demonstrates that it has the potential to cause a reduction in downtime for maintenance, contributing to a positive cost-benefit relationship, since that with fewer stops there is a reduction in production costs.Item Importância da simulação para a eficiência de produção na indústria sucroalcooleira(Instituto Federal de Educação Ciência e Tecnologia de Alagoas, 2021-12-17) Costa, Daniel Rodrigues de Oliveira da; Rocha, Martha Suzana Rodrigues dos Santos; Rocha, Martha Suzana Rodrigues dos Santos; Cunha, Simonise Figueiredo Amarante; Santos, Taciana do NascimentoSimulation within the industry consists of defining, thinking about formulating, developing a functional specification, which cannot be applied in different situations. This work presents, through a literature review, the importance of simulation for the sugar and ethanol industry and addresses points for this industry, with an increasingly fierce confrontation by the productive sector in the globalized market. The method can be a powerful ally, including many automation and control benefits of all methods of global leveling up and expansion in efficiency parameters. A complete automated system generates a high degree of investment, but provides long-term benefits. It appears that most of the tools produced have already adopted alternative methods of using resources, equipment and planning and process control needs aimed at optimizing processes and products. In this way, bioethanol has been gaining space and importance. Second-generation ethanol (E2G), whose raw material is lignocellulosic biomass, has been drawing the industry's attention, with a forecast of higher growth until 2026. E2G brings many advantages, such as the low cost of raw materials, lower emission of polluting gases, etc. This work presents, the production of ethanol from lignocellulosic biomass, showing the structure of this biomass and the production step by step. The work was developed through a bibliographic review, based on articles, websites, theses, etc. The process is different from conventional ethanol, first-generation, as it contains the additional steps of pre-treatment and hydrolysis, followed by fermentation and distillation. Such steps are essential for a good ethanol yield at the end of the process. It is verified that there are some disadvantages and challenges to be overcome. In the production of E2G, important differences are pointed out, compared to the first generation, due to the characteristics of the biomass, being necessary to use highly specific enzymes. which currently have a high cost, which still makes the feasibility of the process difficult, among other problems, such as inhibitors that may appear in the hydrolysis and fermentation stages. Es a través de él que se inicia la producción de azúcar y etanol, productos esenciales para la vida humana. Se originó en la isla de Nueva Guinea y junto con la migración humana se extendió por todo el mundo con el tiempo. Llegó a Brasil en 1520, tras la llegada de los portugueses. El etanol es un compuesto orgánico, de color transparente, tóxico e inflamable, soluble en agua y de fuerte olor. El mismo es un producto derivado de la caña de azúcar, maíz, avena, arroz, cebada y trigo. Producto muy importante para la elaboración de bebidas alcohólicas, industria farmacéutica, combustibles y entre otros. Brasil comenzó a lograr la autonomía en relación con los combustibles líquidos y la reducción de costos en su producción, lo que convirtió al etanol en un biocombustible competitivo con relación a la gasolina, cubriendo los mercados internos y externos. Por lo tanto, es de gran importancia en el proceso de desarrollo del país. Por lo tanto, el presente trabajo presenta de forma resumida los pasos del proceso del etanol en la industria sucroalcoholera, así como los parámetros de control de calidad adoptados por la Usina Marituba. Thus, the possibility arises of producing second- generation ethanol as an alternative to fossil fuels, since it is produced from lignocellulosic biomass (sugarcane, corn and beet residues, among others). In addition to being very attractive for the diversification of the energy matrix and for the prevention of the environment, it presents solutions to problems such as the need to increase the fuels production without increase the planted area and also reduces competition with food production. The use of lignocellulosic materials requires a pre-treatment in order to separate their fractions (cellulose, hemicellulose and lignin) to obtain a greater recovery of sugars, aiming at efficiency and productivity in the fermentation process. Just like at work, study institutions, such as chemistry teaching and research laboratories, are also exposed to various risk conditions that can threaten the health, safety and well-being of students, technicians, teachers and visitors, with risk of accidents or the emergence of occupational diseases. In this case, laboratories are seen as places with a high probability of accidents occurring due to physical, chemical, biological, ergonomic and accidental agents that together belong to the so-called environmental and occupational risks. This work, through a bibliographical review, aims to analyze, explain and succinctly emphasize the environmental risks present in chemistry teaching and research laboratories so that the reader, based on the text, becomes aware of risk situations in and implement appropriate methods and correct forms of prevention, avoiding various accidents and occupational illnesses in these laboratory environments.
