Sugarcane is of great economic importance worldwide, and Brazil stands out as the
largest global producer and exporter of sugar, a position reinforced by its strong
sugar and ethanol industry. The country produces approximately 654.5 million tons of
sugarcane, cultivated on approximately 9.7 million hectares, destined for the
production of sugar, ethanol, and renewable electricity from bagasse. Among its
derivatives, VHP (Very High Polarization) sugar stands out, a raw sugar with a
sucrose content exceeding 99.2° of polarization, widely used as a raw material for
refined sugars. The clarification process of sugarcane juice is one of the main steps
for removing soluble, colloidal, and insoluble impurities. This work aims to describe
the juice treatment process, demonstrating the importance of this step in obtaining
VHP sugar within the required parameters.
