The growing demand for safe and high-quality food, combined with increasingly stringent regulatory requirements, makes it essential to adopt practices that ensure the integrity of food products. In this context, this paper is dedicated to analyzing and reviewing Good Manufacturing Practices (GMP) in the food industry, a key tool to ensure the quality and safety of products. The aim of this study is to conduct a literature review on Good Manufacturing Practices in the food industry, highlighting their importance in ensuring the quality and safety of food products. The research addresses the main requirements and methodologies associated with the implementation of GMP, such as the international standards ISO 22000 and HACCP, and the need for ongoing employee training. Additionally, it explores the impact of technologies such as traceability and automation in improving production process efficiency. The results of the review indicate that the adoption of GMP contributes to reduced operational costs, increased reliability in processes, and strengthens companies' competitiveness in the global market. However, challenges such as resistance to change and the need for financial investment are also identified, which require effective strategic management.
