Therefore, ensuring the quality of this raw material from the field to milling is a decisive factor for the yield and efficiency of sugar mills. Thus, this work discusses the activities carried out during the supervised internship in the sucrose laboratory, describing the steps performed in this sector. Sugarcane quality control involves the complete evaluation of the raw material from harvesting to industrial processing. Parameters such as maturation, sucrose content, total recoverable sugars (TRS), Brix, purity, fiber, moisture, pH, vegetable impurities, mineral impurities, contamination, and microbial deterioration are analyzed.
