In this context, this paper is dedicated to analyzing and reviewing Good Manufacturing Practices (GMP) in the food industry, a key tool to ensure the quality and safety of products. The aim of this study is to conduct a literature review on Good Manufacturing Practices in the food industry, highlighting their importance in ensuring the quality and safety of food products. The research addresses the main requirements and methodologies associated with the implementation of GMP, such as the international standards ISO 22000 and HACCP, and the need for ongoing employee training. Additionally, it explores the impact of technologies such as traceability and automation in improving production process efficiency. The results of the review indicate that the adoption of GMP contributes to reduced operational costs, increased reliability in processes, and strengthens companies' competitiveness in the global market.
