2026-03-192026-03-192025https://repositorio.ifal.edu.br/handle/123456789/1433Crystal sugar plays a central role in the Brazilian sugar-energy industry, requiring rigorous quality control to ensure purity, stability, and compliance with the standards demanded by the food, pharmaceutical, and export sectors. Considering that operational factors directly affect the physicochemical parameters of the product, this study analyzes how these indicators reflect the efficiency of the production process. The objective was to evaluate the importance of quality control and identify the influence of ICUMSA color, polarization, moisture content, ash content, reducing sugars, sulfite, and dextran on the final quality of crystal sugar. The methodology was based on a bibliographic review using scientific articles, technical standards, ICUMSA and MAPA documents, as well as the description of analytical methods used in the sugar industry, including spectrophotometry, polarimetry, calcination, oven drying, titration, and chromatography. The results demonstrated that ICUMSA color is directly influenced by clarification efficiency and thermal control; polarization reflects sucrose purity; moisture determines storage stability; ash content indicates mineral impurities; and reducing sugars increase due to thermal or microbiological sucrose degradation. It was also verified that sulfite residues depend on the rigor of chemical treatment during juice clarification, while dextran is associated with cane deterioration and negatively affects crystallization. It is concluded that quality control of crystal sugar is a strategic step in industrial management, enabling deviation detection, process optimization, and the assurance of a final product that meets national and international standards.
