    Currently, Brazil leads the global sugar exports, historically establishing itself as a powerhouse in the sugar-energy sector since the colonial period. This study aims to contextualize the production of refined sugar from sugarcane, linking historical evolution, the Brazilian scenario, and industrial stages, in order to highlight how technological and control decisions impact product quality, yield, and cost. The process involves extraction, purification, crystallization, and refining, with rigorous monitoring of pH, color, granulometry, and moisture. The methodology used was qualitative, exploratory, and bibliographic, based on books, journals, and academic databases such as SciELO, Google Scholar, and CAPES. The study highlights the evolution of the Brazilian sector, quality control practices, integration with ethanol and energy production, and the importance of qualified professionals and automation technologies to ensure stability, productivity, and competitiveness of refined sugar. It was found that fine-tuning operational variables, supported by automation and laboratory monitoring, reduces losses, maintains compliance, and enhances competitiveness, creating opportunities for innovation and more sustainable production routines in the sector.
